The Perfect 4th of July Dessert!

One of my favorite summer events are bonfires. The cool summer nights with the heat radiating to your mosquito bitten legs. If you're lucky you'll see stars in the sky. One of best bonfire snacks are s'mores. The whole combination is just delicious and genius. Marshmallows toasted to perfection (golden color) and milk chocolate melting in your mouth.



I have decided to take this iconic treat and turn it into something better, a s'mores pie!!








Ingredients


  • 1/2 cup unsalted butter, softened

  • 1/2 cup white sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup all purpose flour

  • 1 cup graham cracker crumbs

  • 1 teaspoon baking powder

  • 1 cup marshmallow creme

  • 2-3 whole chocolate bars. ( I used Ewedel Milk Chocolate, european chocolate)

  • 1 cup mini marshmallows








Instructions


1. Preheat oven to 350 degrees and spray a pie pan (8-10 inch) with baking spray


2. In a large bowl, beat together the butter and sugar. Add the egg and vanilla and mix to combine. Stir in flour, graham cracker crumbs, and baking powder


3. Take 2/3 of the dough and press on the bottom and up the sides of the prepared pie pan. Carefully spread the marshmallow creme over the bottom crust. Cover the creme with chocolate squares. ( I ended up using 2 bars and it was very chocolatey and rich. If you want more marshmallow and less richness, I would recommend using 1-1.5 bars of chocolate.) Sprinkle 1 cup of marshmallow on top


4. Take remaining dough and flatten in to cover as much of the marshmallows as possible. Sprinkle a few more marshmallows on top, if desired.


5. Bake for 20-25 minutes or until graham cracker dough and marshmallows are golden brown.


6. Remove from oven and let cool for 5-10 minutes and place. a few chocolate squares so they can melt on top. Let pie cool for an additional 20 minutes before slicing so it doesn't get too messy.



This pie was so good. It was like s'mores 2.0. The crust even tasted like the honey Teddy Graham crackers. If you love s'mores, then I highly recommend this pie!
