Blueberry Cheesecake Cookies

Growing up I have always had a interest in baking, even though I haven't had the time to do it often. I try hard to make sure whatever I am making comes out as delicious and appealing as possible. I highly enjoy making unique things and goods I have never tried before. As much as I love the classic chocolate chip cookie, I wanted to branch out a little bit and make these blueberry cheesecake cookies!


Ingredients:


  • 2 boxes Jiffy Blueberry Muffin Mix

  • 4 oz cream cheese, softened

  • 1 stick of margarine

  • 2 eggs

  • 1/2 cup light brown sugar

  • 1 1/2 cup white chocolate chips (Depending a how sweet you like your cookies, I would recommend 1 cup of chocolate chips. I might even do 1/2 cup or 3/4 cup next batch.)


Preparation:


1. Mix softened butter and cream with light brown sugar in a bowl


2. Mix in eggs, one at a time. Make sure it is mixed thoroughly


3. Add the blueberry muffin mix and combine thoroughly


4. Fold in chocolate chips


5. Cover dough and let chill in the fridge for at least one hour


6. Preheat oven to 325 degrees


7. Spray baking pans with nonstick cooking spray and place a golf sized ball of dough 2 inches from each other


8. Bake for 15-17 minutes, or until golden brown around the edges





Not to toot my own horn, but these were honestly very good and they even tasted like a better version of Entenmann's Blueberry Little Bites. I was very happy with how they turned out and I will definitely be making them again.
